Ingredients

  • 2 sliced aubergines
  • 3-4 table spoons olive oil
  • 4-5 medium onions sliced
  • 1lb minced beef or lamb
  • 4 tomatoes peeled and sliced or tinned (1?)
  • 1/4 pint of brown stock (juice from tinned tomatoes)
  • 1/4 tablespoon tomato puree
  • 1 pint mild cheese sauce or 2 eggs and 1/4pt cream
  • Salt and pepper.

Method

  1. Slice and fry aubergines in 2 tablespoons of oil for 4-5 minutes then put in bottom of overproof dish
  2. Fry onions in oil for about 5 minutes.
  3. Put layer of onion, aubergine and browned beef also in layers and tomatoes on top.
  4. Mix tomato puree and stock.
  5. Cook in oven for about 30 minutes then pour on well seasoned beaten eggs and cream. Finish for 15-20 minutes.
